Garlic Butter Cube with Umibudo

Mashed Potatoes:
  1. 4-5 medium potatoes
  2. 1 tbsp unsalted butter
  3. 2 tbsp milk
  4. 1 tbsp cream cheese
  5. Salt
  6. Black pepper
  7. Paprika
  8. Dried oregano
  1. 1 tbsp Shaoxing wine
  2. ½ tbsp brown sugar
  3. 2 tbsp light soy sauce
  4. ½ tbsp sesame oil
Garlic Butter Beef Cubes:
  1. 500g Beef Cubes
  2. Pink himalayan salt
  3. 3 cloves of garlic (sliced)
  4. 2 tbsp olive oil
  5. 1 tbsp fresh rosemary
  6. 1 tbsp butter
  7. Mayonnaise
  8. Sea grapes
Mashed Potatoes:
  1. Cut the potatoes into smaller pieces.
  2. Boil them for about 12 mins until a fork can be inserted easily. 
  3. Drain them and pan fry till all the water is dried out. 
  4. Mash them. 
  5. Add the butter, milk and cream cheese.
  6. Mix well. 
  7. Add some salt, black pepper, paprika and dried oregano, according to your preferences.
  1. Put all the ingredients in a saucepan and heat it up till it reduces to a light sauce consistency.
Garlic Butter Beef Cubes:
  1.  Tenderise the meat by lightly pounding them using a mallet to break down the tough muscle fibres. 
  2. Sprinkle them with some pink himalayn salt and set aside. 
  3. Thinly slice 3 cloves of garlic, then fry them in a skillet with the olive oil and fresh rosemary. 
  4. Cook till the garlics turn light brown and remove from skillet. 
  5. Add 1 tbsp of butter to the same skillet and add in the beef cubes.
  6. Sear the beef cubes till all sides brown. Remove from skillet and let them rest on the plate for about 8 minutes.
  7. Warm up the sauce, then drizzle it over the beef cubes. 
  8. Serve it with some mashed potato, mayonnaise and sea grapes.
